Ingredients
Scale
- 3 ripe bananas, mashed
- 3/4 cup blueberries (fresh or frozen)
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups self-raising flour (or 1 1/2 cups all-purpose flour + 2 1/4 tsp baking powder + 1/4 tsp salt)
Instructions
- Preheat oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
- Mash bananas in a bowl until smooth, then add eggs and vanilla extract. Mix until combined.
- Add flour (or homemade self-raising flour mix) to the wet ingredients, stirring until just combined.
- Fold in blueberries gently.
- Pour batter into the prepared loaf pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
- Frozen Blueberries: If you’re using frozen blueberries, don’t thaw them before adding them to the batter. This prevents excess moisture from making the bread soggy.
- Ripeness of Bananas: The sweeter the bananas, the better the flavor. For best results, use bananas that are heavily spotted or even almost fully brown.
- Self-Raising Flour: If you don’t have self-raising flour, you can easily make it by combining 1 1/2 cups of all-purpose flour with 2 1/4 teaspoons of baking powder and 1/4 teaspoon of salt.
- Vegan Substitute: You can swap the eggs for flax eggs (1 tbsp ground flaxseed mixed with 3 tbsp water per egg) to make the recipe vegan.
- Avoid Overmixing: Stir the batter just enough to combine ingredients. Overmixing can make the bread dense instead of light and soft.
- Storing: This bread stays fresh for 2-3 days at room temperature when wrapped in plastic. For longer storage, refrigerate it for up to 4 days, or freeze it for up to 3 months.
- Add-ins: Feel free to customize the recipe by adding chocolate chips, nuts (like walnuts or pecans), or spices like cinnamon for a fun twist on the classic recipe.
